Vegan Banana Bread

This vegan banana bread is perfect little snack or breakfast for little ones or busy mamas and as always takes about 5 minutes to prep! It is also a great option if you are looking for gluten free / dairy free / egg free / soy free / snacks for school or day care....just put in mini muffin tins and cook for a little less. Hope you enjoy!

Vegan Banana Bread

Ingredients:

  • 4 large ripe banana
  • 1 1/2 cups buckwheat flour
  • 2 tbsp. ground flax seed (mixed with 4 tbsp. water)
  • 1/4 cup coconut oil + a little extra to grease pan
  • 1/4 cup coconut sugar (could also use any other sugar)
  • 3 pitted medjool dates
  • 1 tsp. vanilla extract
  • 1 1/2 tsp. cinnamon or pumkin spice 
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • pinch sea salt
  • Optional add ins: chocolate chips (enoy life) or chopped walnuts

Instructions:

  1. Preheat oven to 350 degree Fahrenheit
  2. Place bananas, coconut oil, dates and vanilla in food processor and process until fairly smooth
  3. Mix dry ingredients into separate bowl.
  4. Pour wet ingredients into bowl to mix with the dry until fully mixed together. 
  5. Lightly grease loaf pan and pour iningredients.
  6. Bake for 33-40 minutes or until golden brown on top. 
  7. Note: Bake for less (around 22-25 minute or slightly golden on top) if making muffins instead of bread.
