Salted Caramel Energy Bites

These are made for tired mama's (such as myself) and everyone else of course!  They contain Maca powder which is an adaptogen that happens to have a caramel like flavour but is also rich in iron, can help with liver support as well as balance hormones. It is actually also reported to help with female fertility. These energy bites are also a lovely source of healthy fats to help keep you going through the whole day. Hope you Enjoy!

Salted Caramel Energy Bites

Ingredients

  • 1 cup sliced almonds
  • 1 cup pitted medjool dates (the softer the better)
  • 1 tbsp coconut oil
  • 2 tbsp raw organic maca
  • 2 tsp. vanilla extract
  • 1/8 or a good pinch or sea salt
  • 3 tbsp of unsweetened finely shredded coconut for rolling

Instructions

  1. In a food processor place the almonds and process until it forms into a rough flour consistency.
  2. Add the dates and process until the dates very finely chopped.
  3. Add the remaining ingredients and process until fully combined.
  4. If the mixture feels dry add a tbsp or two of water and process again until it easily sticks together. It will often form into a ball in the food process.
  5. Line a tray with parchment paper or use glass.
  6. Take about a tablespoon of the mixture and roll into a ball with your hands.
  7. Place the shredded coconut into a small bowl and and roll the ball to coat with the coconut.
  8. Place the bites on the glass tray or parchment paper and freeze for at least 30 minutes.
  9. Store in an airtight container for about a month in the freezer (they have never lasted that long!) or about a week in the fridge.
