Warming Turkey Chili

I am loving my crock pot this year. Maybe it's the consistent minus 30 temperatures or maybe it's having two kids. Either way I love only having to do some quick prep in the morning and then having a warm, nourishing meal ready by dinner time. This one happens to be a favourite of my toddler (for this week anyway!).

Warming Turkey Chili

Ingredients

  • 1 1/2 cups of black beans (I use dry and then soak overnight prior to cooking but canned works as well)
  • 1 lb ground turkey
  • 796 mL can of diced tomatoes
  • 350 g corn (I used frozen)
  • 3 cups peeled & chopped sweet potato (1 medium)
  • 1 red pepper chopped
  • 1 medium onion chopped
  • 4 stalks of celery diced
  • 1 Jalapeno diced finely (optional)
  • 4 cups veggie or chicken broth
  • 1/3 cup chili powder (feel free to add more to taste!)
  • 2 tbsp cumin
  • 1 tsp smoked sweet paprika (optional)
  • 1 tbsp chipotle powder (optional)
  • salt & pepper to taste
  • sliced avocado (optional)
  • chopped cilantro (optional for garnish)

Instructions

  1. Start by cooking the ground turkey until fully cooked. Season with salt and pepper as desired.
  2. Place all ingredients in crock pot and cook on high for around 6 hours-8 hours.
  3. Garnish with slices of fresh avocado and chopped cilantro.
  4. Enjoy!

Notes

This is a mild and light tasting chili. It's just the right amount of spice for my toddler however you may feel you need to add more spice so taste before serving and add accordingly!
